Route 83 makes distinctive knives for chefs, pitmasters and serious home cooks. Hand-finished using proven steels and solid natural hardwoods, every knife is made for performance, balance and years of use.

Around 30 steps go into making a Route 83 knife, with 27 completed by hand. Each knife is worked on individually, from shaping and finishing to sharpening and final inspection. We use proven German and Japanese steels, paired with solid natural hardwood and antler handles.

We choose materials for performance, not fashion. Route 83 knives use German 1.4116 stainless steel, Japanese AUS-8 and Japanese VG-10 Damascus.
Handles are made from solid natural hardwoods and antler — never Pakkawood.
DESIGNED WITH EXPERIENCE.
Route 83 knives are developed and tested with chefs and pitmasters. Our work with world champion pitmaster Moe Cason involved multiple prototypes, with blade shape, balance and handle design refined through testing and feedback before the finished knives were produced.
