Signature XL Brisket Carving Knife 13″

The Signature Brisket XL Carving Knife is designed for long, clean slicing strokes through brisket, roasts and other large cuts of meat. Its 13½-inch blade provides substantial reach, while the larger purpose-designed handle provides a secure, comfortable grip and controlled feel throughout the cut.

The blade uses a Japanese VG-10 cutting core hardened to 60 HRC ±1, clad in 67 layers of stainless Damascus steel. VG-10 was selected for its combination of edge retention, corrosion resistance and durability, providing a fine cutting edge while remaining practical for regular use.

The handle is made from solid natural walnut and individually shaped and finished by hand. Its multi-dimensional shape provides a natural grip between the first and second fingers, helping with control and allowing the knife to sit securely in the hand without unnecessary grip pressure.

Stainless-steel handle caps provide strength and act as a counterweight, helping balance the extra-long blade from tip to handle.

Each knife is supplied in a premium storage box.

CARE

Route 83 stainless-steel knives require straightforward care. Wash by hand with warm water and mild detergent and dry after use. The blade does not require oiling and is suitable for normal food preparation, including acidic ingredients.

Natural walnut handles require no routine oiling. If desired, an occasional application of food-safe oil can be used to enhance the natural grain and appearance of the timber.

Natural hardwood varies in grain, color and character. This natural variation is limited to the appearance of the handle and does not affect the knife’s dimensions, construction, balance or performance.
