MOE CASON SIGNATURE BRISKET XXL 14½" SLICING KNIFE
The Moe Cason Signature Brisket XXL is an extra-long Damascus carving knife developed for precise slicing through brisket, roasts and large cuts of meat. Its 14½-inch blade supports long, controlled strokes for clean, even slices, while the extended, multidimensional handle is shaped to fit naturally in the hand and remain secure during demanding barbecue preparation.
Developed with pitmaster Moe Cason, the knife is designed around balance, accuracy and control rather than unnecessary weight. Its three-quarter tang and stainless-steel end cap work together as a counterweight, producing a balanced and responsive feel.
The blade has a Japanese VG-10 core with 67-layer stainless Damascus construction, hardened to HRC 58–60. The partially titanium-plated finish provides a distinctive contrast while retaining the visible Damascus pattern. This construction combines fine cutting geometry, edge retention, corrosion resistance and practical sharpening.
Each handle is made from solid natural ebony or Italian olive wood and individually shaped and finished in-house. The generous Route 83 handle is designed around grip and hand position, making it easier to control when hands are greasy or oily than a conventional flat handle.
Each knife is individually hand-finished and supplied in a premium storage box.

CARE
Wash by hand with warm water and mild detergent, then dry after use. Do not place the knife in a dishwasher or use abrasive cleaners or scouring pads on the blade. The blade does not require oiling and is suitable for normal food preparation, including acidic ingredients.
Natural hardwood handles require no routine oiling. If desired, an occasional application of food-safe oil can enhance the grain and appearance of the timber.
NATURAL MATERIALS
Natural ebony and Italian olive wood vary in grain, colour, texture and character. This variation is limited to the appearance of the handle and does not affect the knife’s dimensions, construction, balance or performance.
