Signature Bread Knife 12″

The Signature Bread Knife is a long, balanced bread knife designed to cut cleanly through everything from soft loaves to bread with a firm, crusty exterior. Its 12-inch blade provides the reach needed for large loaves, while the purpose-designed cutting edge grips the crust and cuts through with minimal pressure.

The blade uses a Japanese VG-10 cutting core hardened to 60 HRC ±1, clad in 66 layers of stainless Damascus steel for a total 67-layer construction. VG-10 was selected for its combination of edge retention, corrosion resistance and durability.

The handle is made from solid natural hardwood and individually shaped and finished by hand. Its multi-dimensional shape provides a natural grip between the first and second fingers, helping with control and allowing the knife to sit securely in the hand without unnecessary grip pressure.

Stainless-steel handle caps provide strength and act as a counterweight, helping balance the long blade from tip to handle.

Each knife is supplied in a premium storage box.

CARE

Route 83 stainless-steel knives require straightforward care. Wash by hand with warm water and mild detergent and dry after use. The blade does not require oiling and is suitable for normal food preparation, including acidic ingredients.

Natural hardwood handles require no routine oiling. If desired, an occasional application of food-safe oil can be used to enhance the natural grain and appearance of the timber.

Natural hardwood varies in grain, color and character. This natural variation is limited to the appearance of the handle and does not affect the knife’s dimensions, construction, balance or performance.
